This week is focusing on quick and easy meals for dinnertime, and my hubby’s favorite foods in honor of his birthday! My husband and I are huge Cubs fans, and with the two kiddos we don’t want to spend a ton of time this week cooking dinner, that way we can enjoy the last great weather with the kiddos and cheer on the Chicago Cubs!



Meal Prep 10/9-10/15

Monday: Leftovers

Tuesday: Doritos Locos Taco Salad (Taco Tuesday!)

Wednesday: It’s the Hubster’s birthday, so we’re dining out with his free birthday offers!

Thursday: Chicken Parmesan Crescent Rolls

Friday: ALDI Mama Cozzi’s Deli Cheese Pizza

Saturday: Instant Pot Beef Stew (Convert from Crock Pot recipe)

Sunday: Leftovers

Dinner Only Grocery List:

Ground Beef (1 lb)
Nacho Cheese Doritos (or ALDI Equivalent)
ALDI Shredded Mexican Cheese
Lettuce (Shredded)
Black Beans x1
Sour Cream
Mild Taco Seasoning Packet
1 package Crescent Rolls
Precooked Breaded or Crispy Chicken Tenders (Tyson Crispy Chicken Strips are great for this)
String Cheese or Sliced Mozzarella Cheese
Parmesan Cheese
Traditional Pasta Sauce
ALDI Mama Cozzi’s Deli Five Cheese Pizza
Additional Toppings you like for pizza
One Beef Chuck Boneless Roast
Carrots x1
Celery x1
Mushrooms (we omit these)
Onion x1
Frozen Peas
Bay Leaves
Condensed Tomato Soup x1

Pantry Staples (if you don’t have on hand)
Italian Seasoning
Garlic Salt
Salted Butter
Garlic Powder
Black Pepper
Beef bouillon cubes

Make sure to check these recipes when making your list for any ingredients you may not already have in your pantry!

Are you noticing a trend here? We do leftovers every other day for the most part. We know this may not be fun or exciting, but it does save a ton of money on our grocery bill! The Chicken Parmesan Crescent Rolls don’t give us enough for leftovers, but a $5 pizza is a good compromise!

Our ALDI is closed for remodeling, so to avoid too many trips across town we’re stocking up on stuff so we’re not running out multiple times a week. We’re saving up right now to get a freezer for our garage, because right now we don’t have room to store too much frozen meat or freezer meals. I’m hoping once we can get a freezer I can do a whole day of freezer meal prep to have during our upcoming *hopeful* kitchen remodel!
